Raffaello Cupcakes

I have baked my first cupcakes. Finely! I actually prefer to bake real cakes and hearty meals but then again, I thought it would be nice to try something new. And for you guys I’m willing to try a lot of new things regarding food. Don’t be to hard on me when looking at the appearance of the cupcakes. The most important thing is, that they taste fantastic. And they do, believe me.
I decided to bake raffaello cupcakes because that’s my favourite candy and they actually tasted very similar to the lovely, white store-bought balls.

Serves 18 | Time needed ~ 2 h

For the coconut cream:
150 ml coconut milk
1/2 pack vanilla pudding powder
100 ml whipped cream
2 tbsp sugar
icing suger for dusting

For the dough:
100 g butter
150 g sugar
2 eggs
250 g flour
1/2 sachet of baking powder
150 g coconut flakes
250 ml milk

For the sugar cream:
100 g butter
50 g sugar
70 g cream cheese
50 g coconut cream
150 g powder sugar

  1. Mix the vanilla pudding powder with 3 tbsp of coconut milk. Put the rest of the coconut milk, whipped cream and sugar in a pan and bring to boil. Add the pudding- coconut milk mixture and stir for approx. 2-3 min over low heat. Fill into a bowl, dust with icing sugar and let it cool.
  2. Pre-heat the oven up to 180 °C.
  3. Stir together butter and sugar so that it forms a cream,then add the eggs one by one. Mix the flour with 50 g of coconut flakes and the baking powder. Stir the flour mixture and the milk into the butter cream.
  4. Fill a muffin pan with paper baking cups (alternatively you can use silicone muffin cups) and fill the cups halfway with the cake mixture. Add one teaspoon of pudding cream on top an cover carefully with the other half of the cake mixture.
  5. Bake the cupcakes for approx. 20 min. Remove pan from the oven and the cups from the muffin pan. Allow to cool down.
  6. For the sugar cream, cream the butter with the sugar and add the cream cheese and coconut cream. Add the icing sugar and stir until it reaches stiff consistency.
  7. Spread the sugar cream on top of each cupcake and sprinkle with the rest of the coconut flakes.
  8. Enjoy with a cup of tea.
