Parsley – Pistachio Pesto

The delicious mixture that you can make in many variations and eat with pasta, rice, meat, fish- you name it. Here is one that 1. Is green. and 2. Taste delicious :-)

Serves 8-10 | Time needed  ~  20 min

25 g parsley
15 g basil
2  garlic cloves
40 g pistachios
10 g pine nuts
50 g olive oil
50 g pumpkin seed oil
50 g parmesan
salt and pepper to taste

  1. Coarsely chop the parsley, basil, pistachios and pine nuts and place in a bowl.
  2. Peel and chop the garlic cloves and add to the bowl.
  3. Mix all ingrediants in the bowl using a hand blender until finely chopped and smooth.
  4. Add the oils in portions, stirring continuously.
  5. Fold in the parmesan and stir by hand until everything is well combined.
  6. Enjoy with bread, rice, noddles, fish…feel free to use your fantasy!
